Since people were curious, I emailed Porsche and asked about the rear spoiler.
The rear spoiler will start to raise when the vehicle hits 75mph and will start to lower at 37mph. The spolier can be raised and lowered manually. If you have a current model (997) there is a button on the centre console in front of the gear stick which will allow you to do this. If however you have an older model the button is in a less accessible place, it's located near the fuse box under the drivers foot well.

... and they actually got back to you in a timely fashion too!
75 mph does sound more reasonable (approx 120 km/h), I went for a test ride in one when i was in Florida (actually spideyfanatic, it WAS on Dec. 28, the day we left WPB... see? I celebrated right for you! LOLZ, but I digress...) and we got up to about 50 mph on city streets and side roads. The salesman put the spoiler up manually but that was it, so i knew about where the button was to put it up as well on the 997. He also had to turn on the car again to put it down when he parked it, so if you turn off the engine without putting it down, it will stay up. Probably not a good idea to leave it up tho, considering it could be subject to vandalization or whatever depending on where you park your car... i don't think this is an issue for anyone sadly, as none of us has a Porsche (yet!)...
However, given the nature of this thread, I am slightly curious on how you presented your questions and reasoning to Porsche?

yeh... I should have told them that the cayenne's ugly that they seem to have been putting the engines in the wrong place for a long time, that they should hire an actual designer and that no-one's been fooled by their putting a 911 roof on a boxter and calling it cayman. but I doubt thay'd have been too pleased really. Had it been Aston, Lambo the like... sure, i'd have kept it. I'll go see if its in the trash bit, but I dont think it will be.

It was... ok... here's what I put: a friend of mine was curious about the hiden rear spoiler on some 911s and I thought I'd enquire for him... when does it raise? at what speeds? and can it be raised and lowered manualy?, or does it do so in any other situation other than at a given speed?

The spolier can be raised and lowered manually. so she definitely can raise it on purpose, i. e. if she wants to. but i still think that, in this special case, lifting the tailfin was kind of accidental. the conversation she's had with LMQ a few seconds ago didn't really turn out the way she expected it to be (it's so funny watching her talking to him - it looks as if she had rehearsed a lot, especially the part with "you criminal types..."), and when she left, she was very exited (her emotions being turned upside down). so this is why i think that excitement could also influence the tailfin mechanism.

That's what I've been saying all along... that was probably a bit of a Freudian slip for her... maybe the spoiler can be flipped up when she's nervous or self conscious without her really realizing it.

...a BIG PHAT freudian slip! ;D well, this scene is all about body language... (don't try to conceal what you body will reveal) i guess this is the reason why i like this movie so much: the way the cars are animated, there are so many details. like in this scene. or the bad dream afterwards (the rem phase he obviously is in while dreaming). and much more...
